Plantain Dessert

This is one of my favorite desserts.

Ingredients

1 Ripe Plantain
1 Clove (whole)
1/2 tsp Vanilla extract
1 Tbsp Butter (or substitute)
1 Tbsp Splenda Brown Sugar

1/4 c. water
[Feta Cheese optional]

Instructions
Peel and cut plantain into 1 inch long pieces.
Place all ingredients on frying pan and start cooking at medium high, mixing in order to golden the plantain and form a syrup with the sugar, butter and water. Cover pan, lower heat and simmer for about 15-20 minutes. Be careful not to let the syrup dry. You may need to stir in additional water.

Serve warm.
Option: sprinkle some feta cheese on top when serving.

Notes
1. I usually prepare 2-4 plantains at a time. It keeps well in the fridge and heats up well on the microwave.
2. Options: instead or in addition: cinamon, allspice.
3. Ripe plantain, more black than yellow on the outside. When selecting them on the Grocery store, pick those that feel soft.
