Plantain Dessert

This is one of my favorite desserts.

Ingredients

1 Ripe Plantain
1 Clove (whole)
1/2 tsp Vanilla extract
1 Tbsp Butter (or substitute)
1 Tbsp Splenda Brown Sugar

1/4 c. water
[Feta Cheese optional]

Instructions
Peel and cut plantain into 1 inch long pieces.
Place all ingredients on frying pan and start cooking at medium high, mixing in order to golden the plantain and form a syrup with the sugar, butter and water. Cover pan, lower heat and simmer for about 15-20 minutes. Be careful not to let the syrup dry. You may need to stir in additional water.

Serve warm.
Option: sprinkle some feta cheese on top when serving.

Notes
1. I usually prepare 2-4 plantains at a time. It keeps well in the fridge and heats up well on the microwave.
2. Options: instead or in addition: cinamon, allspice.
3. Ripe plantain, more black than yellow on the outside. When selecting them on the Grocery store, pick those that feel soft.

Grilled Beef and Vegetable Soup

I wanted to eat grilled beef, after all it's winter, but with the cold out there I also wanted soup. Here's what I came up with.

Ingredients
1 Beef Round Roast (2.5 - 3 lbs)
1 Tbsp Hickory Liquid Smoke
1/4 c water
3 Tbsp Adobo (Cumin, Garlic, Black Pepper, Salt, [Sugar optional])
8 oz Mushrooms (pieces & stems)
15 oz Butter Beans
12 oz tomato paste
2 c. Mixed Vegetables (carrots, corn, green beans, peas) frozen
1 c. Mirepoix Cajun Blend (onion, celery, green pepper) frozen
1 c. Mixed Peas and Carrots frozen
14 oz Petite diced peeled tomatoes
4 c. water
1 Tbsp Cilantro
2 Garlic
1/2 Red Bell Pepper (whole)
1 Bay Leave
2 Beef bullion
[2 Tbsp Splenda Brown Sugar optional]

Instructions
Marinate Beef with liquid smoke, water, and adobo.
Grill beef at high flame enough to reduce fat and brown exterior (~5-10 min)
Place in crock pot
Throw in rest of ingredients.
Cook on low for 12 hours or 6 hours on high.
Half way the cooking period, cut roast into 1 inch cubes and place back in crock pot.

Easy to prepare and very yummy. Perfect for a winter evening or just to keep available throughout a weekend day. The house smelled wonderfully.

Notes
1. The sweetener should not be necessary depending on the natural sweetness of your vegetables (carrots, peas, corn, etc.).
2. I kept thinking of adding some red wine to the crock, perhaps I will when I reheat it, or just have some with it. I'll let you know if I do.
3. Another option I kept thinking but did not, was adding anchovies to the crock. For those of you that are making a face, you may want to read the ingredients in Worcestershire sauce.

Ground Turkey Chili

Yet another healthy, easy to prepare (under 30 minutes), chili-like recipe.

Ingredients

~1 c. Kroger Recipe Beginnings Onion and Bell Peppers Blend (green, red and yellow peppers, onions)
~1 c. Kroger Recipe Beginnings Mirepoix Cajun Style Blend (onions, celery, green peppers)
~3 tbsp Vegetable Oil (olive, corn)
~1 lb Ground Turkey Breast
~3 tsp Poultry Seasoning (thyme, sage, marjoram, rosemary, black pepper, nutmeg)
~2 tsp Cumin
~1 tsp Garlic
~1 tsp Salt
1 can (14.5 oz)Petite Diced Tomatoes with Chipotle
1 can (15 oz) Black Beans (drained)
~1 oz Lemon Juice
Fresh Cilantro

Instructions

Sauté the Recipe Beginnings vegetables with the oil on a deep pan at medium high heat. Once the onions are translucent (~5 min), add the turkey, poultry seasoning, cumin, garlic, and salt. Cook mixing frequently until turkey is white (~ 5-10 min). Add tomatoes, beans and lemon juice. Stir and simmer for ~ 10 min. Chop or shred the cilantro. Serve on a bowl and use the cilantro instead of cheese to garnish.

Enterprise Library 4.1 Installation Error

So I noticed there was a new published version of patterns & practices application blocks. I had already installed version 4.0, so of course I had to uninstall it. What a surprise! I continued to get the error after doing so. Rebooted, Ran a registry fix utility, etc., same thing. Do not despair; this codeplex discussion thread provided the answer...

Remove this key from the registry:
"HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Enterprise Library v4"

Now the installation should work.
