Mojo Picante

Ingredients

CANNED/BOTTLED
1/4 cup Vegetable Oil
1/4 cup Apple Cider Vinegar

DRY CONDIMENTS
1 teaspoon cumin
1 teaspoon salt
1 teaspoon black pepper
1 bay leaf
4 chili peppers

FRESH CONDIMENTS
2 habanero peppers
12 leaves cilantro
4 cloves garlic
1/2 green bell pepper
1/2 carrot

OPTIONAL
Onion
Red Pimento

Instructions
Place all ingredients, except for the bay leaf, in blender and puree.
Pour into sterilized air tight glass jar together with bay leaf and optional diced red pimento for decoration and added flavor. Keep in fridge up to a month.
Prepare at least one day before intended use date.

Use with care (hot!). Place on dish, not on food, until you understand how hot this is. A few drops, half a teaspoon, is excellent in soups. Mix a little bit with your mayonnaise for hot dogs and burgers. Also excellent in dips!

Ground Turkey Chili 2

From scratch (almost completely), no comercial brand exclusive ingredients, healthy chili-like recipe. Preparation time about an hour.

Ingredients

CANNED/BOTTLED
1 28 oz Tomato crushed
1 28 oz Tomato diced
1 15 oz Beans black drained
1 15 oz Beans kidney drained
1/4 cup Canola Oil

MEAT
2 lbs Turkey ground 93/7

DRY CONDIMENTS
1 TBSP Coffee decaf instant
1 TBSP Oregano
2 TBSP Cumin
1 TBSP Garlic crushed/chopped
1 tsp Coriander whole crushed
1 tsp Red Pepper (hot) crushed
1 inch Cinamon stick
3 packets (13.5-15 g) Cane Sugar (natural, turbinado, or brown)

FRESH CONDIMENTS
1 Onion large finely chopped
1 Bell Pepper Green sliced/chopped
1 Sweet Pepper (Ají Dulce) sliced/chopped
2 stalks Celery sliced/chopped
2 Green Onions sliced/chopped
1/4 cup Carrots sliced/chopped

OPTIONAL
Cilantro

Instructions

Sauté the fresh vegetables plus garlic with most of the vegetable oil on a deep pan at medium high heat. Once the onions are translucent (~5 min), remove them and set aside. Now cook the turkey with rest of oil plus dry condiments except for the sugar. Once the turkey has turned "white" (~5-10 min) add sugar and mix while it browns (~ 2 min). Add sauteed veggies and mix. Add canned tomatoes and beans. Stir and simmer for ~ 10-20 min min. Chop or shred the cilantro (optional). Serve on a bowl and use the cilantro instead of cheese to garnish.

Nevado para torta

2 Egg whites
1.5 Cup Sugar
.25 Tbsp Creme Tartar
.33 Cup Water
optional: .5 tsp vanilla or other extract
Preparation
Combine in double boiler. Beat on high until firm ribbon is achieved (About 7 minutes). Scrape sides and bottom and mix.

Torta Base

3.5 Cup Flour (*)
2.5 Cup Sugar
1.5 Cup Margarine, Crisco, or Butter
1.0 Cup Milk
1 Teaspoon Vanilla
2 Teaspoon Baking Powder (*)
8 Eggs

Preparation
1. Beat egg whites and put aside
2. Beat grease while slowly adding sugar
3. Add egg yolks one at a time
4. Add milk plus vanilla
5. Add flour
6. Pour mix onto beaten egg whites and fold in
7. Bake at 300 degrees F approximately for 1 hour
