Tilapia a la Ana

Kathleen's Tilapia Seasoning
3 TBSP Flour (all purpose wheat flour)
1 TBSP Garlic (powder)
1 TBSP Pepper (black ground)
1 TBSP Tarragon (dry leaves)
1/2 tsp Salt

Ingredients
Tilapia fillets
Lemon Juice
Kathleen's Tilapia Seasoning
Olive Oil
Butter

Preparation
Place thawed tilapia fillets in cold water with lemon juice (key lime/vinegar) for a few minutes.
Mix Seasoning and place in cup or shaker container.
Placed fish fillets on tray and use a brush to paint with olive oil.
Sprinkle with seasoning.
On a skillet at medium to medium high temperature melt butter and place some olive oil.
Cook seasoned fillets.

Notes
The seasoning mix amount can be used for several batches, so a shaker container that can be sealed is a good idea.
For a regular package (12 Oz/about 6 fillets) of Tilapia, I use about a third of the mix or less since I lightly sprinkle the fish. The cooking time, at medium heat, is about 3-5 minutes per side.
